I am new to the forums - please excuse any blunders I make! My husband and I have been eating LC since early January. I have lost 45 lbs. and he has lost about 30, plus dropping his A1C (diabetic blood test) from over 9 to 5.2, lowering one of his diabetes meds and getting off of another one altogether. Our biggest weakness is sweets, so I have been trying to bake LC, with success...I just need a substitute for almond flour. Hubby is allergic to nuts (except me!) and I don't want to cause any unwanted nausea, vomiting, etc. Any suggestions? Thanks!

Hi Honighasse! I can't think of a substitute for almond flour, that isn't another nut flour. I'm sure someone will come along with some good suggestions. Just wanted to say
I'm sorry I don't have an answer for you but believe me, someone here will! I have a son that is allergic to peanuts but tested negative to "real" nuts but we keep them away from him because often times they can become allergic to other foods that have a high degree of being allergenic (that sentence didn't make much sense). So I can relate on needing to find alternatives!

You Might Not Guess: I started college at age 16 after skipping two grades along the way, but never went back after my first year. Instead I "took 1 year off" and moved to Vail to decide on a major. 27 years later it is obvious I majored only in the mountains.

While definitely not a perfect solution, I would try using flax meal. Like almond meal, it is high in fat. If you just swap the high-fat almond flour out with a 'dry' flour substitute of any kind, you're going to lose that fat content and you may end up with a dry texture.
The bake mix in my Volume II cookbook is both soy and nut-free - I came up with this one originally because my friend DebF is also allergic to nuts, as are many others.

Well, I got adventurous and the results are not too bad! I wanted to try the Gingerbread Coffee Cake in the current issue of Low Carb Energy magazine, which calls for almond flour and vital wheat gluten. I cut them both out and used the TLC bake mix from Volume II, plus only part of the leavening called for in the recipe. I even doubled the recipe to use the entire half pint of buttermilk I had to buy, put it in a 9x13 pan and whadda ya know? It worked! Tastes pretty good too! Thanks for your good wishes and help!
